Ingredients

To prepare these delicious gluten-free blueberry muffins, you’ll need the following ingredients:

  • 2 cups of gluten-free flour (you can use almond flour or a gluten-free flour blend)
  • 1 cup of fresh or frozen blueberries
  • 1/2 cup of coconut sugar or brown sugar
  • 1/3 cup of melted coconut oil or butter
  • 2 eggs
  • 1/2 cup of plant-based or regular milk
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of vanilla extract
  • A pinch of salt

  • Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  • Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
