This certification is awarded to restaurants that uphold Italy’s culinary traditions, guaranteeing imported ingredients and genuine techniques. By obtaining this certification, restaurants enhance gastronomic excellence and ensure an authentic dining experience for customers.

A Project with Official Support

The Italian Quality Seal is granted by the Italian-Costa Rican Chamber of Commerce in collaboration with food blogger Tavo (@tavolorossocr). Its goal is to highlight restaurants that honor Italian culinary culture and elevate the gastronomic standards in Costa Rica. Establishments must meet rigorous evaluation criteria to obtain this certification.

Certification Requirements

The certification process assesses dish quality, ingredient origins, and adherence to traditional recipes. The main requirements include:

  • Use of 100% Italian ingredients: Authenticity is verified for key products such as wheat flour, Parmigiano Reggiano, Mozzarella di Bufala, Prosciutto di Parma, extra virgin olive oil, and San Marzano tomatoes.
  • Respect for original recipes: Iconic dishes like pasta carbonara, Neapolitan pizza, and risotto must be prepared without modifications that alter their authenticity.
  • Predominantly Italian menu: At least 80% of the dishes must adhere to Italy’s gastronomic standards.
  • Ongoing supervision: Surprise inspections are conducted to ensure continuous compliance with the established criteria.

Not Just for Traditional Restaurants

The Italian Quality Seal can also be awarded to food trucks, catering services, and other gastronomic businesses. This broadens access to true Italian cuisine, offering more diverse options in Costa Rica.

Certification Cost and Renewal

Obtaining the Italian Quality Seal is affordable, ranging from $120 to $150 depending on the establishment’s location. The certification is valid for one year and must be renewed annually through a new evaluation.
